Easy Cookie Recipes-Cranberry, Chocolate Chip and Coconut Cookies

Ingredients
1 C. brown sugar
1/2 C. white sugar
1 C. butter, softened
2 eggs
1 tsp. vanilla
1 C. rolled oats
1 1/2 C. flour
1 tsp. baking soda
1 tsp. baking powder
1 C. dried coconut
1 C. dried cranberries
1 C. chocolate chips

Directions
Preheat oven to 350 degrees.

Cream butter and sugars. Add eggs and vanilla and mix to combine. In a separate bowl, combine dry ingredients. Add into wet ingredients gradually.

Drop spoonfuls onto cookie sheets. Bake for 10 minutes until edges are crisp and center is slightly gooey. Let rest on cookie sheet for a few minutes before moving to cooling rack to cool completely.

Easy Cookie Recipes-Chocolate Raspberry Tea Cakes

Ingredients
1-1/2 cups flour
1/4 cup sugar
1/4 cup packed brown sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup butter, melted
1/2 cup milk
1 egg
2 cups milk chocolate chips
1/3 cup seedless raspberry jam

Heat oven to 350 degrees. Line 12 muffin cups with paper baking cups. In a large bowl, stir together flour, sugars, baking powder, and salt. In a small bowl, combine butter, milk, and egg. Add to the flour mixture, stirring just until combined. Stir in milk chocolate chips. Spoon half of batter into the 12 muffin cups, filling half full. Spoon 1 teaspoon raspberry jam into each muffin cup; top with remaining batter. Bake in a preheated 350-degree oven for 20 to 25 minutes or until golden brown. Serve warm with additional jam, if desired.

Yields: 12 muffins

Easy Cookie Recipes- Apple Glazed Cookies

2 cups flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 cup butter, softened
1 1/2 cups brown sugar
1 egg, beaten
1 cup chopped apples
1 cup raisins

Glaze:
2/3 cup confectioners' sugar
1 tablespoon milk

Preheat oven to 350* Cream together butter and sugar. Add in the egg. Combine the flour, soda, salt and all the spices and gradually add to creamed mixture. Stir in the apples and raisins. Bake for 12-15 minutes. Cool. Then pour the glaze overtop the cookies.

Easy Cookie Recipes-Pumpkin Cookies

2 servings

1/3 cup flour
3 tablespoons sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon baking powder
1/8 teaspoon baking soda
1/8 teaspoon salt
1/2 cup mashed cooked pumpkin
2 tablespoons golden raisins
1 tablespoon frozen egg substitute, thawed
1 teaspoon vegetable oil
vegetable cooking spray
1 tablespoon chopped pecans

Combine first 6 ingredients in a bowl; set aside. Combine pumpkin and next 3 ingredients; add to dry ingredients, stirring just until moistened. Spoon batter into 2 (3-inch) circles on a baking sheet coated with cooking spray; sprinkle with pecans. Bake at 375° for 17 minutes or until cookies spring back when touched lightly in the center. Yield: 2 cookies

Easy Cookie Recipes-Chocolate Chip Apricot Cookies

INGREDIENTS:

* 1 1/8 cups all-purpose flour
* 1/2 teaspoon baking soda
* 1/2 cup butter, softened
* 1/2 cup turbinado sugar
* 1/2 cup packed brown sugar
* 1 egg, lightly beaten
* 1 1/2 teaspoons vanilla extract
* 1/4 teaspoon salt
* 1 cup chocolate chips
* 1 cup chopped dried apricots

DIRECTIONS:

1. Preheat oven to 375 degrees F (190 degrees C). Grease a cookie sheet.
2. Mix the flour and baking soda in a bowl. In a separate bowl, beat together the butter, turbinado sugar, and brown sugar until fluffy, then beat in the egg, vanilla, and salt. Stir the flour and baking soda into the butter mixture. Fold in the chocolate chips and apricots. Drop by rounded teaspoonfuls onto the cookie sheet.
3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Easy Cookie Recipes-Amish Buttermilk Cookies

1 cup shortening
2 cup white sugar
4 eggs
4 cups all-purpose flour
4 tsp baking powder
2 tsp baking soda
1 tsp salt
1 cup buttermilk
4 tsp vanilla extract

Preheat oven to 425 degrees. Grease cookie sheets and set aside.

In a large bowl, cream together the shortening and sugar. Beat in the eggs, one at a time. Stir in the vanilla. Combine the flour, baking powder, baking soda, and salt. Stir the flour mixture into the creamy mixture, alternately with the buttermilk. Drop by rounded spoonfuls onto the prepared cookie sheets. Bake for 6 to 8 minutes in the preheated oven. Allow cookies to cool on the baking sheet for 5 minutes before removing to wire racks to cool completely.

Easy Cookie Recipes-Andies Candies Cookies

Makes approx. 10 dozen

3/4 cup butter or margarine
1 1/2 cup brown sugar
2 Tablespoons water
2 eggs
2 cups chocolate chips
2 1/2 cup flour
1 1/4 teaspoon baking soda
1/2 teaspoon salt
3 boxes Andes candies

In sauce pan over low heat, melt butter; add sugar and water. Then add chocolate chips. Stir until partially melted. Remove from heat; stir , then cool for 5 minutes. Add eggs and dry ingredients; mix with a mixer on low speed until blended. Chill 1 hour. Make into little balls and bake on an ungreased cookie sheet at 350 degrees for 10-13 minutes. While still hot, put Andies candy mint on each cookie, let it get soft then swirl mint with spoon. Cool on baking rack.

Easy Cookie Recipes-SNICKERDOODLES

INGREDIENTS
1/2 cup butter, softened
1/2 cup shortening
1 1/2 cups white sugar
2 eggs
2 teaspoons vanilla extract
2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons white sugar
2 teaspoons ground cinnamon

DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
Cream together butter, shortening, 1 1/2 cups sugar, the eggs and the vanilla. Blend in the flour, cream of tartar, soda and salt. Shape dough by rounded spoonfuls into balls.
Mix the 2 tablespoons sugar and the cinnamon. Roll balls of dough in mixture. Place 2 inches apart on ungreased baking sheets.
Bake 8 to 10 minutes until tops split. Remove immediately from baking sheets onto cooling racks.

Easy Cookie Recipes-Chewy Oatmeal Raisin Cookies

1/2 cup (1 stick or 4 ounces) butter, softened
2/3 cup light brown sugar, packed
1 egg
1/2 teaspoon vanilla extract
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt (I often use a half teaspoon, but I like more salt in my baked goods)
1 1/2 cups rolled oats
3/4 cup raisins
1/2 cup walnuts, chopped (optional)

Preheat oven to 350°F (175°C).

In a large bowl, cream together the butter, brown sugar, egg and vanilla until smooth. In a separate bowl, whisk the flour, baking soda, cinnamon and salt together. Stir this into the butter/sugar mixture. Stir in the oats, raisins and walnuts, if using them.

At this point you can either chill the dough for a bit in the fridge and then scoop it, or scoop the cookies onto a sheet and then chill the whole tray before baking them. You could also bake them right away, if you’re impatient, but I do find that they end up slighly less thick.

The cookies should be two inches apart on a parchment-lined baking sheet. Bake them for 10 to 12 minutes (your baking time will vary, depending on your oven and how cold the cookies were going in), taking them out when golden at the edges but still a little undercooked-looking on top. Let them sit on the hot baking sheet for five minutes before transferring them to a rack to cool.

Easy Cookie Recipes-Baked Oatmeal Cookies with Cardamom

Ingredients:
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
1 teaspoon freshly grated nutmeg
1/4 teaspoon ground cardamom (use more! use more! you know you want to)
1 cup (2 sticks) unsalted butter, softened
1 1/4 cups firmly packed dark brown sugar
1/4 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
2 3/4 cups rolled oats
1 cup (8 ounces) dried cherries
1/2 cup (4 ounces) chopped toasted walnuts

In a large bowl, whisk the flour, baking soda, salt, cinnamon, nutmeg, and cardamom together and set aside.

In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugars together on medium-high speed until smooth and creamy. Scrape down the bowl and add the eggs, one at a time, beating until each is incorporated. Add the vanilla and beat for 5 seconds.

Add half of the flour mixture and mix for 15 seconds. Add the remaining flour mixture and beat just until incorporated. Scrape down the bowl, add the oats, and beat until just combined. Use a spatula or wooden spoon to fold in the cherries and walnuts.

Cover the bowl tightly and refrigerate for 6 hours. [Note: I skipped this step and you can too; though this'll allow the flour to absorb more liquid and make the cookies that much more flavorful.]

Preheat the oven to 375 degrees F. Line two baking sheets with parchment paper.

Drop the dough by rounded tablespoons onto the prepared baking sheets. [Note: I never do this. Instead, I always use a large ice cream scoop and scoop out perfectly shaped big fat cookies.

Easy Cookie Recipes-Peanut Butter Surprise

1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup butter, softened
1/4 cup peanut butter
1 teaspoon vanilla extract
1 egg

Filling:
3/4 cup powdered sugar
3/4 cup peanut butter
Preheat oven to 375* Combine flour, cocoa and soda. Beat sugars, butter and peanut butter. Beat in the egg and vanilla. Stir in the flour mixture and blend well. Set aside. Make the filling by blending the powdered sugar and peanut butter.
Roll the filling into 1" balls (about 30 balls). Shape a tablespoon of balls around each peanut butter ball. Place onto un-greased cookie sheet 2" apart and flatten each one with a glass (dip in sugar for something extra!) Bake for 7-9 minutes. Cool.

Easy Cookie Recipes-Coconut Gems

Ingredients
250g-butter
275g granulated sugar
1 large egg
1 tsp natural vanilla extract
½ tsp natural almond extract
330g-flour
½ tsp bicarbonate of soda
1 pinch baking powder
1 pinch salt
150g fine shredded coconut
A pot of your favorite jam
Method
1. Preheat oven to 190C (170C fan)/Gas 5. In a mixing bowl cream together the butter and sugar and once smooth and combined, add the egg and vanilla and almond extracts.
2. In another bowl, combine the dry ingredients and slowly add to the butter mixture. Once well mixed, add the shredded coconut, being careful not to overwork the dough.
3. Chill dough in the fridge for half an hour, and then roll it in your hands to form 2in balls. Place apart on a greased baking sheet and press your thumb into each ball. Fill each thumbprint with a dollop of your favorite jam (I like raspberry).
4. Bake for 9-12 minutes, until just starting to brown at the edges. Remove from oven and cool on a wire rack. Perfect cookies should be soft in the middle with crunchy golden edges and a warm pool of yummiest in the center.

1 c. flour

1/2 tsp. salt (opt.)

1/2 c. oil

Mix dry ingredients and add remaining ingredients to moisten. Drop
by teaspoonful onto greased cookie sheet. Bake at 375 degrees for 12
minutes.

Easy Cookie Recipes-Cream Cheese Cut Outs

2 1/2 cups flour
3/4 cup sugar
1/4 tsp salt
1 cup butter, softened
2 T cream cheese, softened
1 1/2 tsp vanilla

In a large bowl mix flour, sugar and salt. With a mixer on med-low, add butter. Then add in the cream cheese and vanilla. Beat the dough on low until a ball forms. On a lightly floured surface, shape the dough into a ball. Divide into 2 pieces and form 2 flat disks. Wrap in plastic wrap and refrigerate for 30 minutes. On a lightly floured surface, roll out 1 disk at a time until it's 1/8" thick. Cut dough into desired shapes and lay on ungreased cookie sheet. Bake at 375* for 7-9 minutes or until firm and bottoms are lightly browned. Transfer and let cool.

Easy Cookie Recipes-Chocolate Raspberry Cheesecake Brownies

6 oz Semisweet chocolate; chopped

3 oz Unsweetened chocolate; chopped

2 Cream cheese; softened

2 c Sugar

4 Eggs

1 tb Vanilla extract

1 c Butter; softened

1 c Flour

1/4 ts Salt

1/2 c Raspberry jam

In heatproof bowl set over hot (not boiling) water, melt semisweet with unsweetened chocolate.

Remove from heat; stir until smooth. Let cool to lukewarm.

In large bowl, beat cream cheese with 1/3 cup of the sugar until smooth.

Beat in 1 of the eggs and 1 teaspoon of the vanilla until well combined.

Set aside.

In separate large bowl, beat butter with remaining sugar until smooth.

Beat in remaining eggs, one at a time, beating well after each addition.

Beat in remaining vanilla, then chocolate, mixing well.

Mix in flour and salt just until combined.

Line a 13 x 9 inch cake pan with foil, leaving overhand for “handles”.

Reserve 1 cup of the chocolate batter. Spread remaining chocolate batter in pan.

Spread with cream cheese mixture. Spoon reserved chocolate batter in dollops over top.

Spoon jam in smaller dollops among chocolate dollops.

With knife, zigzag through layers for marble effect.

Bake in 350 degrees F oven for 35 minutes or until tester inserted 2 inches from center comes out slightly moist.

Let cool on rack.

Easy Cookie Recipes-Diabetic Applesauce Bran Cookies Recipe

Ingredients
1 3/4 cups cake Flour
1/2 tsp. Salt
1 Tsp. Cinnamon
.1/2 Tsp. nutmeg

1 Tbs Liquid diabetic sweetner
1 egg
1 cup Diabetic Applesauce

1 cup all Bran or could use {1 cup raisin Bran

Directions
Preheat oven 375 degrees
Sift Flour, salt cinnamon nutmeg cloves and soda together
Cream butter liquid sweetener and egg till light and fluffy
Add Flour mixture and applesauce alternately mixing well after each addition.
Fold in raisins and all-bran
drop by level teablespoons onto greased cookie sheet about 1 inch apart
Bake at 375 10 minutes or untilll goleden brown
Yeilds 4 dozen

Easy Cookie Recipes-Tortona chocolate cookies

Total time: 35 minutes, plus chilling and cooling time for the dough

Servings: 2 dozen cookies

Note: Adapted from chef Elena Guerrero-Berman of Massimo's Delectables. Be careful not to grind the nuts to a fine powder or flour; the nuts should have some texture (you will see small bits in the cookies when they are baked). A food processor will work best for grinding the nuts.

2 cups (4 sticks) butter, softened

2 cups sugar

1 cup ground hazelnuts

1 cup ground almonds

1 tablespoon vanilla

4 cups pastry flour

1 cup unsweetened cocoa powder

1. In the bowl of a stand mixer using a paddle attachment, or in a large bowl using a hand mixer, cream the butter with sugar until light and fluffy, 3 to 5 minutes, scraping the sides of the bowl periodically.

2. Gently fold the ground hazelnuts into the butter mixture until evenly combined, then fold in the ground almonds thoroughly.

3. Stir in the vanilla. Gently add the flour, 1 cup at a time, until thoroughly mixed. Slowly add the cocoa until combined. The dough will be very thick at this point, and you should easily be able to roll a small amount into a ball.

4. Shape the dough into a flat disc and wrap tightly in plastic wrap. Refrigerate dough at least two hours, but preferably overnight.

5. Heat the oven to 325 degrees. Roll the dough to one-half-inch thickness between 2 sheets of parchment paper or plastic wrap (this keeps the dough from sticking to the rolling pin and alleviates the need for flouring). Cut hearts or other-shaped cookies approximately 2 1/2 inches in diameter, and place the cookies on a parchment-lined baking sheet. Bake the cookies until puffed slightly and set on top, about 15 minutes. Rotate the cookies halfway through for even heating and coloring.

6. Remove the cookies, still on their sheets, to a rack to cool completely before serving (they're fragile just out of the oven and will crumble if moved while still warm).

Each cookie: 317 calories; 4 grams protein; 35 grams carbohydrates; 5 grams fiber; 20 grams fat; 10 grams saturated fat; 40 mg. cholesterol; 3 mg. sodium.

Easy Cookie Recipes-Quick Cherry Winks

1 roll of refrigerated sugar cookies
1 cup chopped pecans
1/3 cup chopped maraschino cherries, well drained
1 1/2 cups coarsely crushed corn flakes
12 maraschino cherries, quartered

Preheat oven to 374* Break up cookie dough into a large bowl. Add pecans and chopped cherries and mix well. Drop tablespoonfuls of dough into cereal to coat. Shape into balls and place 2" apart onto ungreased cookie sheet. Lightly press quartered cherries into top of each ball. Bake for 11-14 minutes or until edges are light golden brown. Cool and remove from cookie sheet.

Easy Cookie Recipes-Apple Cookies

1 pkg of refrigerated sugar cookie dough (20 oz)
1 granny smith apple

Preheat oven to 350* Put sugar cookie dough in freezer for 1 hour. Remove wrapping from the dough. Cut into 22 thing slices. Arrange the slices in a circle about 1/2" from the edge of your pan (or baking stone if you have one). Slices should touch each other. Make another row of slices inside the first leaving the center open. Peel, core and slice the apple and then cute the rings in half. Arrange slices in two circles on dough pressing the ends in slightly. Combine ingredients for topping and sprinkle over the dough. Bake for 25 minutes or until lightly browned. Immediately loosen from the pan and allow to cool for 10 minutes before serving.

1 cup creamy peanut butter
1/2 cup white sugar
1/2 cup butter, softened
2/3 cup honey
2 eggs

Easy Cookie Recipes-Candy Cane Cookies

1 cup butter
1 cup powdered sugar
1 egg
2 tsp vanilla
1/2 tsp salt
2 1/2 cups flour

red food coloring
1/4 cup crushed candy canes
1/4 cup sugar

Preheat oven to 375* Cream together the butter, powdered sugar, egg and vanilla. Sift in flour and salt in separate bowl and add to butter mixture. Divide dough in half and color one half red. Roll a tsp of each color dough into a 4" strip and then lightly press them together. Twist them like a rope and place onto ungreased cookie sheet. Curve the top down to look like a candy cane. Bake about 9 minutes or until lightly browned. While still warm, remove from baking sheet and sprinkle with sugar and candy cane mixture.

Easy Cookie Recipes-Ice Cream Cookies

1 cup milk
1 pkg of favorite pudding
2 cups cool whip
36 large cookies

Make the pudding mix with milk. Add in the cool whip and blend well. Spread the filling on the flat side of the cookie and set another cookie on top. Press lightly and smooth the edges. Freeze for at least 3 hours. Store in a covered container.

Easy Cookie Recipes-Strawberry Thumbprints

2/3 cup butter
1/3 cup sugar
2 egg yolks - set aside the egg whites
1 teaspoon vanilla
1/2 teaspoon salt
1 1/2 cups flour
2 egg whites, beaten
1/3 cup strawberry preserves

Preheat oven to 350* Cream together the butter and sugar. Gradually add the egg yolks, vanilla, salt and flour. Mix until well blended. Shape into 1" balls, dip in the egg whites and place on greased cookie sheet. Press a thumbprint into top of each cookie. Bake for 15-17 minutes. Cool. Just before serving, fill holes with strawberry preserves.

Easy Cookie Recipes-Carmel Filled Chocolate Cookies

1 cup butter, softened
1 cup white sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
2 1/2 cups flour
3/4 cup baking cocoa
1 teaspoon baking soda
1 (13 ounce) package Rolo candies
4 squares white chocolate, melted

Preheat oven to 375* Cream together the butter and the sugars. Beat in eggs one at a time. Add in vanilla. Combine flour, cocoa and baking soda and stir into creamed mixture. Shape a spoonful of dough around each Rolo. Place on ungreased cookie sheet and bake for 7-10 minutes. Cool. Drizzle with the melted chocolate.

Easy Cookie Recipes-Oatmeal Raisin Cookies

3 eggs, beaten
1 teaspoon vanilla
1 cup butter
1 cup brown sugar
1 cup sugar
2 1/2 cups all-purpose flour
2 teaspoons baking soda
2 cups rolled oats
1 cup raisins

Combine eggs, vanilla and raisins. Cover and let stand for 30 minutes. Preheat oven to 350* Cream the butter and sugars. Sift the flour and baking soda and add to creamed mixture. Stir in the raisin mixture and oats. Drop by spoonfuls onto ungreased cookie sheet and bake for 10 minutes or until lightly golden brown. Cool.
