Easy Cookie Recipes-Traditional Oatmeal Cookies

1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1/2 teaspoon vanilla
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup rolled oats

Preheat oven to 350* Cream together the butter and sugars. Blend in the egg and vanilla. Then stir in the dry ingredients until well blended. Roll into balls and place on greased cookie sheets. Bake for 12 minutes or until lightly golden brown.

Perfect Sugar Cookies-Easy Cookie Recipes

2/3 cup shortening
2/3 cup butter
1 1/2 cups sugar
2 eggs
2 teaspoons vanilla
3 1/2 cups flour
2 teaspoons baking powder
1 tsp salt

Preheat oven to 350* Cream together shortening, butter and sugar. Stir in the eggs and vanilla. Combine the flour, salt and powder and blend into the creamed mixture. Shape into balls and place on ungreased cookie sheets. Bake for 10-12 minutes or until lightly golden brown. * You may also roll them in some sugar just before placing on the cookie sheets for some extra decoration!

Easy Peanut Butter Cookies-Easy Cookie Recipes

1 cup peanut butter
1/2 cup sugar
1 egg

Preheat oven to 325* Mix everything together until well blended. Refrigerate for 30 minutes. Roll into 18 balls. Place 2" apart onto ungreased cookie sheet. Flatten each ball in a criss-cross pattern with a fork. Bake for 18 minutes. Cool.

* You can also dip one side in melted chocolate and then into chopped nuts.

Good 'Ol Chocolate Chip Cookies-Easy Cookie Recipes

1/2 cup butter
1 egg, beaten
1 teaspoon vanilla
1/4 cup brown sugar
1/2 cup white sugar
1 1/8 cups flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1 1/4 cups semisweet chocolate chips

Preheat oven to 350* Cream the butter and both sugars. Add the beaten egg and vanilla. Sift flour, baking soda and salt and add tothe creamed mixture. Mix thoroughly and add chocolate chips. Drop by spoonfuls onto ungreased cookie sheets and bake for 7-10 minutes or until lightly golden brown on the edges.

Diabetic Cookies-DIABETIC PEANUT BUTTER COOKIES

1 c. flour
1/2 c. creamy peanut butter
1 egg
1 tsp. vanilla
1/4 tsp. salt
1 1/2 tsp. baking powder
1/2 c. water
1 tbsp. liquid sweetener
1/2 c. salad oil

Mix all together in a large bowl. Shape into balls and place on ungreased cookie sheet. Bake at 375 degrees for 12 to 15 minutes. (You may add a little more flour if desired.)

Sweet Potato Recipes

1/2 cup butter
1 1/2 cups brown sugar, firmly packed
2 eggs
1 cup all-purpose flour
1 cup whole-wheat flour
2 tsp. baking powder
2 tsp. ground cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground allspice
1 lb. sweet potatoes, pared and shredded (about 2 cups)

2 cups uncooked old-fashioned rolled oats
2 cups coarsely chopped pecans or walnuts

In large mixer bowl, cream butter and sugar until smooth. Add eggs, one at a time, beating well after each addition. Sift together all-purpose flour, whole-wheat flour, baking powder, cinnamon, baking soda, salt and allspice. With a wooden spoon, stir in dry ingredients, sweet potatoes, oats and nuts. Spread dough in a 9×13x2-inch greased baking pan. Bake at 350 degree for 25 to 30 minutes until lightly browned. Cool completely on wire rack. Cut into l l/2 inch bars. Makes about 36 bar cookies.

Drop Cookies: Drop dough by heaping tablespoons on lightly greased cookie sheets and flatten to l/2 inch thickness. Bake at 350 degrees for 20 to 25 minutes until lightly browned. Makes about 36 3-inch cookies.

The Purr-fect Treat

1/3 cup butter or margarine
1/3 cup vegetable shortening
1-3/4 cups all-purpose flour
3/4 cup granulated sugar
1 1/3 cup unsweetened cocoa powder
1 large egg
2 tablespoons milk
1/2 teaspoon finely shredded orange peel
2 teaspoons orange juice
1 teaspoon baking powder
1 teaspoon vanilla extract
Orange Icing

1. In a large mixing bowl, beat shortening and butter or margarine with an electric mixer on medium to high speed 30 seconds or until softened.
2. Add half of the flour, sugar, cocoa powder, egg, milk, orange peel, and juice, baking powder, and vanilla. Beat until combined, scraping bowl occasionally. Beat or stir in remaining flour. Divide in half. Cover; chill for 1 to 2 hours or till easy to handle.On a lightly floured surface, roll each dough portion to a 1/8-inch thickness. With a cat-shaped cutter, cut into shapes. Place shapes 1 inch apart on an ungreased cookie sheet.
3. Bake in a 375 degree F oven for 7 to 9 minutes or until edges are firm and bottoms are light brown. Remove cookies; cool thoroughly on a wire rack. Decorate cats with Orange Icing.

Makes about sixty 2- to 3-inch cookies.

Orange Icing: In a small mixing bowl stir together 1 cup sifted powdered sugar, 1/4 teaspoon vanilla extract, and enough orange juice (2 to 3 teaspoons) to make of piping consistency. Stir in enough orange food coloring (or a combination of red and yellow) to color the icing orange. Place icing in a small, sealed plastic bag with a small hole snipped in one corner or in a pastry bag fitted with a small round tip.

Easy Peanut Butter Balls

Serves: varies
Carbs Per Serving: 4 grams carbs
Prep Time: 10 minutes
Effort: Easy

Ingredients:
2 scoops of Vanilla Shake Mix
2 tablespoons of Natural Peanut Butter
3 drops of Stevia or 1 packet of Splenda

How to Prepare:
1.Mix all ingredients in a bowl.
2.Roll into any size desired.
3.Freeze for at least 1hr.
4.Enjoy!

Apple Strudel

Total preparation time: 30 minutes
Serves: 6

Ingredients:
4 red delicious apples
1/2 cup sugar
2 teaspoon cinnamon
2 oz raisins
1 oz sliced almonds
1 oz bread crumbs
1 egg
12 - 14 oz puff pastry sheet
powdered sugar

Steps:

1. Peel, core and slice apples and place in mixing bowl. Add in sugar, cinnamon and raisins. Unfold pastry sheet and place on to a greased cookie sheet. Sprinkle bread crumbs and sliced almonds on the lower half of dough. Beat egg and brush a thin layer on upper half of dough. Place the apple mixture on top of almonds and bread crumbs and roll up the puff pastry around the filling. Press the dough together along the two ends. Brush with remaining egg and bake in oven at 375º for 30 to 40 minutes. Strudel should be golden brown when done.
2. 4 to 6 servings (Strudel is best when served warm. Cut into slices, top with powdered sugar and serve with a scoop of vanilla bean ice cream).

Diabetic Cookies

I am in search of some good diabetic cookie recipes, not just recipes that say no sugar added because i don't consider them to be real diabetic cookie recipes, I am talking about recipes that do not contain any sugar, recipes without white flour but instead spelt flour and so on.
All natural sugars are OK most diabetics can tolerate natural sugars, natural sugars in my experiances don't seem to have a real impact on blood sugar, now I am not saying that this doesn't effect everyone because every person is different so when we eat different products it is basically trial and error the first time around.
So I appeal to you who are diabetics, enjoying your favorite diabetic cookie recipes
please share them with others, post them on this blog or send them to me and I'll post them for you. Lets share and the world will be a better place.
