Chocolate Peanut Butter No Bake Cookies

You’ll need:

½ cup butter (1 stick)
½ cup milk
2 cups sugar
4 TBSP cocoa powder
1 cup-ish peanut butter (I used smooth)
1 TBSP vanilla extract
3 cups oatmeal
Shredded coconut (optional)

Melt the butter in a large pot. Add milk, sugar, and cocoa powder and bring to a boil. Let it bubble for about a minute.

Mix in the peanut butter. Once it has melted, add the vanilla extract and oatmeal.

Drop by the spoonful onto a sheet of wax paper and let cool until hardened, about 20 minutes. If you want to add some shredded coconut, do that while the cookies are still relatively warm.

Super Easy Frosting Dipped Cookie Pops

What you will need:

Cookies (I use marshmallow stuffed so it’s easy to stick the lollipop stick into)

Frosting: Royal|Icing

Lollipop sticks
Bowl
Spoon
Sprinkles of your choice
Wax or parchment paper

Directions:

Don't make the icing thick but not so loose as to run off the pop.
Stick a lollipop stick into the cookie.
Dip half of the cookie into the frosting.
Place on a sheet of wax or parchment paper.
Sprinkle with you choice of sprinkles.

Cinnamon Roll Cookies

3/4 cup unsalted butter, softened
1/2 cup powdered sugar
1/2 tsp salt
1-1/2 tsp vanilla extract
1-1/2 cups all-purpose flour
1/4 cup sugar
1-1/2 tsp cinnamon
1 lg egg white
1 T water

Icing:

1/4 cup powdered sugar
1-2 tsp milk

Directions:

1) In a mixer bowl, cream butter, add sugar, salt and vanilla. Add flour, mix on low until dough starts to come together.
2) Transfer dough to a piece of parchment paper marked out to a 9×12″ rectangle. Using a second paper placed atop dough, roll to size. Whisk egg white and water until foamy, brush completely on surface of rolled dough.
3) In small bowl, mix sugar and cinnamon. Sprinkle evenly over dough. Starting with long end, roll dough into a log, sealing edge with egg white. Wrap in plastic wrap, freeze until firm.
4) Preheat oven to 350 degrees. Line two baking sheets with parchment paper.
5) Remove dough from freezer, unwrap. Using a sharp knife, gently cut into 1/4 to 3/8 inch slices. Place on baking sheets.
6) Bake 12 to 15 minutes until a light golden brown. Remove and cool on wire racks.
7) For icing, mix powdered sugar and milk until smooth and desired consistency. Drizzle over cooled cookies.

Granola Cookie Bars

1/2 cup butter, softened
1/2 cup apple sauce
1 cup packed brown sugar
1/2 cup white sugar
2 eggs
2 teaspoons vanilla extract
1-1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon sea salt
3 cups quick-cooking oats
1/2 cup chopped sliced almonds
1 cup semisweet chocolate chips
1/2 cup dried cranberries

Preheat the oven to 325 degrees F (165 degrees C).
In a large bowl, cream together the butter, apple sauce, brown sugar, and white sugar until smooth.
Beat in eggs one at a time, then stir in vanilla.
Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended.
Mix in the quick oats, almonds, chocolate chips and dried cranberries. Spread the dough evenly in a 13×9 baking pan.

Bake for 35-40 minutes in the preheated oven. Allow bars to cool in 13×9 pan for 20 minutes before cutting and transferring to a wire rack to cool completely. Store in an air tight container.

Oatmeal Chocolate Peanut Butter No Bake Cookies

Prep time: 5 mins
Cook time: 5 mins
Total time: 10 mins
Serves: 12
No bake cookies!

Ingredients:

2 cups granulated white sugar
5 tablespoons unsweetened cocoa
1 stick butter
1/2 cup milk (you can use evaporated milk)
1/2 cup creamy peanut butter
1 teaspoon vanilla
3 cups Old Fashioned Quaker Oats

Method:

In a medium saucepan stir add the sugar, cocoa, butter and milk. Over medium-high heat, bring it to a boil, stirring to help the butter melt. Boiling means that there are bubbles all the way across the top of the liquid. Start your stopwatch now and boil it for exactly 1 minute. Remove from heat and quickly add the peanut butter, vanilla and oatmeal and stir to combine.
Working quickly, drop spoonfuls of the mixture onto a sheet of waxed paper. They will cool and harden within a few minutes. Voila. You’re done!

Notes:
You need wax paper!
